Shrove Tuesday! Pancake Day without the Sugar…

How can you beat the good ‘ol combination of ‘sugar and lemon’ on your pancake? Well, maybe you can’t, but there is no harm in mixing it up a bit and pancakes don’t have to be sugar loaded.

There are many alternatives to the suger hype including savoury pancakes, but if you still crave that sweet fix but hope for sugar substitute then this natVia recipe may do the trick – Carrot Cake Pancakes. All you do is whizz up the core ingredients until a smooth batter is formed, add in the carrot and cook just like a usual pancake using the walnuts and Greek yoghurt to serve. Happy eating!

100g Cottage cheese

2 Eggs

50g Desiccated coconut

40g Wholemeal flour

1 teaspoon Baking powder

2 teaspoons natVia (stocked at Tesco)

1 teaspoon Cinnamon

½ teaspoon All spice

Pinch of salt

75g Carrot, grated

Olive oil, for greasing

Walnuts, for sprinkling

Greek yoghurt, for serving
